Kamut Khorasan Flour: How to Bake With the Amber Wheat

Kamut khorasan flour bakes oddly: high protein, slack gluten. The substitution ratios that work, why it needs less kneading, and what it does to crumb.

The confusing thing about kamut khorasan flour is that its two most-quoted numbers point in opposite directions. Protein sits around 15 percent, well above the 11 to 13 percent of ordinary bread flour, which sounds like a flour that should build ferocious structure. Then you bake with it and the dough is slack, the loaf is dense, and the rise is modest. Both things are true, and the reason is genetics rather than technique.

I spend most of my time on the agronomy side of these grains, and khorasan is the clearest case I know of protein percentage being a bad predictor of what a flour will actually do.

Quick answer: Kamut khorasan flour has more protein than bread flour but weaker, less elastic gluten, because khorasan is a tetraploid wheat like durum rather than a hexaploid like modern bread wheat. It lacks the D-genome that supplies the stretchiest glutenin proteins. In practice: substitute up to 50 percent in yeasted bread, knead less than you think, and use it at 100 percent for pasta, flatbread, pancakes and cookies, where you want flavour and tenderness rather than a tall rise.

Why does khorasan flour behave differently from bread flour?

Because it has a different number of genomes. Modern bread wheat is hexaploid: three ancestral genomes, labelled A, B and D, stacked into one plant. Khorasan (Triticum turgidum subsp. turanicum) is tetraploid, carrying only A and B. Durum, emmer and khorasan all share that tetraploid structure, which is why all three behave more like each other than like the flour in a supermarket bag.

The D-genome is the one that matters for bread. It carries the genes for the high-molecular-weight glutenin subunits that give bread dough its elastic, balloon-like stretch. Take the D-genome away and you still get plenty of gluten protein, but it skews toward gliadin, the fraction responsible for extensibility and stickiness rather than elasticity. This is also why “more protein means stronger flour” is a rule that only holds within a wheat species, not across them. Comparing khorasan’s 15 percent to bread flour’s 12 percent tells you almost nothing useful, because you are comparing different proteins.

How much khorasan flour can you substitute?

It depends entirely on whether the bake needs a gluten network. The table below is where I have landed after a lot of dense loaves.

The pasta row is not a compromise. Durum is the traditional pasta wheat precisely because tetraploid gluten gives a firm, plastic dough that extrudes cleanly and holds its bite, and khorasan does the same job with a sweeter flavour. If you only ever use khorasan flour for one thing, make it pasta.

Does khorasan flour need more or less water?

Slightly less than whole wheat, and this catches people out. The kernels are large with a proportionally thinner bran layer, so khorasan whole flour has less bran surface competing for water than an equivalent whole-wheat flour. Start about 5 percent below your usual hydration and add water only if the dough refuses to come together.

The bigger adjustment is kneading. Khorasan reaches its peak dough strength early and then degrades: keep working it and the gliadin-heavy gluten tears rather than tightens, and you end up with a slack, sticky mass that will not hold a shape. Two thirds of your usual kneading time is a good starting point. If you use a stand mixer, watch the dough rather than the clock.

What does khorasan flour taste like?

Buttery and distinctly sweet, with a smooth nuttiness and none of the tannic bitterness that whole wheat can carry. The colour is a deep amber-gold that shows in the crumb, closer to a semolina loaf than a wholemeal one.

Flavour is the honest reason to use it. The nutritional case is real but modest: khorasan runs higher in protein, selenium, zinc and magnesium than modern wheat, per the USDA FoodData Central entries and the 2022 heritage-versus-modern wheat review by Brouns and colleagues. What it does not do is reduce gluten, and it is not safe for anyone with coeliac disease.

Is kamut the same as khorasan flour?

Yes, with a trademark attached. Kamut is a registered brand for organically grown khorasan wheat of one specific cultivar, QK-77, certified by Kamut International.
