Origin & History

A natural hybrid of emmer wheat and wild goat-grass first cultivated in the Fertile Crescent around 5,000 BCE, spelt initially appeared in the Caucasus and northern Iraq. It spread throughout Central Europe during the Bronze Age, replacing emmer as the dominant wheat across Northern Europe, and remained a staple in Germany, Switzerland, and Austria through the medieval period.
